Coffee & Roasting
Does dark roast have more caffeine than light roast?
Not really. The idea that dark roast has more (or less) caffeine is mostly a myth, roast level barely changes caffeine content. By the scoop, light and dark roasts are nearly identical. What actually moves caffeine is the bean, your dose, and your brew method.
How is your decaf made? Is it chemical-free?
Our FAA Agent DECAF is a single-origin Colombia from the high-altitude Atunkaa region, decaffeinated with the natural Sugar Cane Process. This gentle, naturally derived method removes the caffeine while preserving the sweetness and flavor most decaf processes strip out, so you get a flawless cup at any hour.
What is air roasted coffee?
Air roasted coffee is coffee roasted by suspending the beans in a vortex of hot, clean air instead of tumbling them in a metal drum. Drum roasting can scorch beans or let them pick up smoke. Air roasting keeps the heat clean and even.
The result is an even roast with no bitterness, no burnt flavors, just high-clarity flavor and rich complexity. This is not your gas station dark roast. This is coffee engineered for taste.
Is single origin coffee better?
Single origin coffee is better when you want clarity, traceability, and the natural flavor of a specific farm or region. Legendary Aviation Coffee is single origin only. No artificial flavoring, no syrups, no gimmicks.
Each origin has its own natural tasting notes, and our air roasting plus craft-batch approach highlights that without masking it. You are drinking pure coffee, not a chemistry project.

What is specialty grade coffee?
Specialty grade coffee is coffee that has been rigorously graded, is defect-free, and cups above 80 points on the 100-point coffee quality scale. Only a small percentage of global coffee qualifies as true specialty grade.
We only roast those beans. Nothing lower makes it into a Legendary bag.

What does an 85 coffee score mean?
An 85 coffee score means the coffee has earned a high specialty-grade rating based on quality, flavor, aroma, sweetness, acidity, body, balance, and overall cup experience. Anything 80 or above is considered specialty grade.
Our coffees are independently scored 85 and above, which puts them in the elite tier of global coffee quality. And 90 and above is rare air, the kind of cup that stops you mid-sip. That is exactly what our Dominican Republic coffee brings to the table.
Why does air roasted coffee taste smoother?
Air roasted coffee tastes smoother because the beans are never scorched. Air roasting delivers a clean, even roast with no smoke contamination.
Combine that with Tier 1 beans and craft-batch roasting and you get a cup that is naturally smooth and complex. No creamer required.
Quality, Standards & Sourcing
Is your coffee vegan, gluten-free, and keto friendly?
Yes. Plain black coffee is naturally vegan, gluten-free, keto, and Whole30-friendly, it is just roasted single-origin beans with nothing added. We never add flavoring, oils, or fillers. (Our flavored syrups vary, so check the individual product page if you add one to your cup.)
Is Legendary Aviation Coffee fair trade?
We go a step above fair trade. Our model is direct trade and relationship-driven sourcing, which puts more money in farmers' hands and gives us access to Tier 1, top 1% quality beans.
Fair trade is fine. Direct trade is better, for farmers and for your cup.
Why don't you offer organic certified coffee?
Organic certification is a label, not a guarantee of quality. Specialty-grade coffee often exceeds organic farming standards because farmers must follow elite practices to produce high-scoring coffee.
We choose farms based on quality, sustainability, ethics, and integrity, not whether they paid for a certification stamp.
Is coffee mold a real concern?
Mold and toxin concerns are often overstated in marketing, especially when specialty-grade sourcing, drying, sorting, and storage are handled correctly. Our sourcing partners follow industry-leading practices:
- Proper drying
- Thorough sorting
- Clean storage
- Climate control
Specialty-grade coffee is held to much higher standards than bulk commodity coffee, and we roast only the top 1%. Your cup is clean, safe, and built for clarity.
Aviation, Veterans & Our Story
Do you sell gift cards, and what makes a good gift?
Yes. Digital gift cards are available and delivered by email, perfect when you are not sure which roast they will love. For a ready-made gift, the Flight of Coffee sampler lets someone taste several single-origins at once.
Do you offer wholesale or bulk orders?
Yes. We partner with cafes, FBOs, flight schools, hangars, offices, and event organizers who want specialty-grade coffee with a story. Tell us what you need and we will build a program that fits.
What is aviation coffee?
Aviation coffee is coffee built around aviation culture, military heritage, and the people who love flight. Legendary Aviation Coffee is a disabled veteran-owned coffee roaster based in Rockwall, Texas. Every coffee is aviation-inspired, air-roasted, single origin, and specialty grade.
We are not another generic coffee brand with a plane slapped on the bag. We live the culture.
Is Legendary Aviation Coffee veteran owned?
Yes. Legendary Aviation Coffee Company is 100% disabled veteran-owned. Our founder is a U.S. Army Aviation veteran and former flight test engineer who built this company around aviation, discipline, craft, and service.
We roast in Rockwall, Texas, and donate 10% of profits to veteran and aviation-focused nonprofit organizations. Great coffee should do more than taste good.
What is the best coffee for pilots?
The best coffee for pilots is smooth, clean, flavorful, and never bitter. Pilots do not need burnt gas-station coffee pretending to be fuel. They need a cup that performs: specialty-grade, air-roasted, single origin, and built for clarity.
That is why people call us the Top Gun of Coffee. We are not your average coffee roaster, and we never will be.

Brewing & Storage
Can I use your coffee for espresso, and what brew ratio do you recommend?
Yes, any of our single-origins make excellent espresso, just grind fine and dial in your shot. For drip and pour-over, a good starting point is roughly a 1:16 ratio (about 1 gram of coffee to 16 grams of water), or around 2 tablespoons per 6 oz cup. Adjust stronger or lighter to taste.
How fresh should coffee be when ordered?
Coffee should be roasted close to when it ships, not months in advance. Our coffee is roasted in craft batches weekly, not mass production runs. Your order is roasted shortly before shipping.
You will taste the difference immediately in clarity, aroma, and sweetness in the cup.

What grind size should I use for coffee?
The right grind size depends on your brewing method:
- French Press: coarse
- Drip brewer: medium
- Pour over (V60 or Chemex): medium-fine
- Espresso: fine
If you want help dialing it in, reach out and we will help you match grind to gear.
What is the best way to store coffee?
Store coffee in an airtight container, away from light, heat, and moisture. Do not refrigerate or freeze it, because that damages the oils and flavor structure.
For maximum clarity and aroma, buy whole bean and grind right before brewing.
Can I visit your roasting facility in Rockwall, Texas?
Not yet, but soon. We are building toward more public-facing experiences.
Follow our social channels for pop-ups, events, and behind-the-scenes drops where you can meet the team and taste what we roast.

What is your return and refund policy?

Opened consumables and used gear cannot be returned, for food safety and quality. Damaged, lost, or stolen shipments are handled through SavedBy Package Protection if you added it at checkout.
What is SavedBy shipping protection?
SavedBy is optional package protection offered at checkout. It covers lost, stolen, or damaged packages, the exact issues carriers rarely take responsibility for.
If something goes wrong in transit and you added SavedBy, your reorder or refund is handled through their claim process.
What happens if I decline SavedBy shipping protection?
If you remove SavedBy at checkout, you are choosing to ship without protection. In that case:
- You assume responsibility for lost, stolen, or damaged packages.
- Legendary Aviation Coffee is not required to replace or refund orders affected by carrier issues.
- Any claims must be taken directly to USPS, UPS, or FedEx.
This keeps the process fair and transparent for everyone.
Does SavedBy cover shipping costs or taxes?
No. SavedBy covers the value of the products only. Shipping charges, taxes, duties, and the protection fee itself are not refundable.
How do I file a SavedBy claim?
After purchase, SavedBy emails you your protection details. If something happens, you file the claim through their portal using your order number.
They handle the claim and resolution directly.
Does free shipping include insurance?
No. Free shipping uses USPS Ground Advantage or its current USPS equivalent, and it does not include insurance unless you add SavedBy at checkout.
The carrier delivered my package to the wrong address. Am I covered?
SavedBy does not cover incorrect addresses entered at checkout. If the wrong address is entered by the customer, carriers generally will not insure or reroute the package, and it may be unrecoverable.
Always double-check your shipping details before submitting your order.
